Good knives, Henkels, Wustoff, etc, I sharpen usually once a week. Cheap knives, ones from the supermarket, I sharpen before every use. I would love to have a sharpener so I can do it myself. Henckels sharpener for home use, but I have also taken my knives to Sur La Table to have them professionally sharpened.
